Founded in 1940 by Jose Olivio Chavez, Finca Huixoc is in the lush mountains of northwestern Guatemala’s Huehuetenango region. Huixoc means “water spring” in the local Mam dialect and refers to the natural springs providing crop irrigation and power for the mill where the beans are washed and patio dried.
